Looks like I can get it to fit with some "modifications" (size 207 x 165 x 30)

Yeah, I went with the 7" actually. I liked the idea of having the 8" screen sitting "flush" with the dash (hiding the boarder of the screen).
Still kinda interested to see if anyones done it though

I tried for quite a while to work an 8" touchscreen into where the double DIN stereo is on the Ghia dash. From memory, the rectangle of the 8" unit fits perfectly onto the small "flat" parts around the DIN hole.
I went to a metalmaker to build me a small mounting bracket for it that would use screw holes already existing inside the DIN hole. But after considering car thieves looking into my cabin, I decided against doing that. In the end, I was inspired by Pimp My Ride to have a false front fabricated to go over it, but then I'd lose the stereo and would have to mount that elsewhere. I never took it any further after my carputer power supply died.

iv been told that if you put in a 7" double din into a AU it cant reali be done because it will stick out to far because of the slight dash slope, is this true?

Yes, it's true. It will stick out a tiny bit at the bottom but it's nothing to really worry about. The factory unit is slightly curved towards the bottom to match the dash.
